What Makes these Rolls the SOFTEST, FLUFFIEST and just IRRESISTIBLE??

Well, itโ€™s all down to the ingredients.

Milk:

Using milk instead of water when making bread. Milk has a higher fat content so yields a softer bread roll. It also adds a beautiful golden brown to the rolls when baking.

Vinegar (buttermilk):

Vinegar is used in this recipe to ensure a perfect rise. It does this by creating stronger gluten strands within the dough. And donโ€™t worry if you donโ€™t have any vinegar on hand or maybe you just donโ€™t like the idea of using vinegar in bread, just switch out your regular milk for buttermilk; milk + vinegar is a buttermilk substitute!

Corn Flour/Corn Starch:

The addition of corn flour in this recipe tenderises the gluten, giving a fluffier texture similar to a Japanese milk bread. The corn starch also helps to create a perfect rise when proofing your dough.

Salted Butter:

By incorporating softened butter after making your dough, when baking in the oven you create layers and pockets of steam that work to create flaky layers of buttery bread. And of course thereโ€™s the flavour component that butter gives, especially salted butter which I find to be essential here in creating dinner rolls with the best flavour profile.

How do I know when my Dough has finished Proofing?

You can tell your dough has finished proofing when it has almost doubled in size; if youโ€™re using a glass bowl you should see air bubbles at the base. Also when taking the dough out the bowl you should be able to punch all the air out of it.

And remember, succeeding this step in making the dough will ensure that you achieve the fluffiest dinner rolls ever!

But what if my Dough hasnโ€™t risen after an Hour?

There are a number of reasons why this may of happened but here are the most common:

  • the room you left your dough in is too cold- try to leave you dough in a warm, dry place like next to your oven or an AGA
  • your yeast is dead (I know quite dramatic)- this may be because your yeast is too old so make sure to check the best before date, this also may be because your yeast came in direct contact with your salt when mixing (try to mix your yeast separately to your salt- this is what I have done in this recipe)

How do I know when my Dinner Rolls have finished baking- are they raw in the middle?

You know your dinner rolls are ready when they have turned a medium golden brown colour. If you press on the sides and centre of your rolls they should feel quite firm and not dough-like.

What can I bake my Dinner Rolls in?

I used this Le Creuset baking dish. You can use any 20ร—20 cm dish- I would recommend either glass or ceramic. If you donโ€™t have one here are a few other options:

Ingredients

For the Dinner Rolls

  • 1 โ…” Cup Milk
  • 1 Tsp White Vinegar
  • 1/3 Cup White Sugar
  • 1 Tbsp Instant Yeast
  • 1 Large Egg
  • 3 ยพ Cup Plain Flour
  • 1/4 Cup Corn Flour
  • 1 Pinch Salt
  • 1/4 Cup Melted Salted Butter
  • Egg Wash egg + milk

Instructions

For the Dinner Rolls

  • Mix the milk, white vinegar and sugar in a large bowl

  • Microwave for about 1 min - 1 min 30s or until warm to the touch

  • Sprinkle over your yeast and briefly mix

  • Mix in 1 egg until combined

  • Add in your flour, corn flour and a pinch of salt

  • Mix this until a rough dough forms

  • Knead your dough for about 10 mins

  • Gradually knead in ยผ cup of melted butter

  • Leave your dough to rise in a warm, dry place for about 1 hour or until doubled in size

  • Punch out any air in the dough

  • Cut your dough into 8 pieces and roll into dough balls

  • Place each dough ball into a greased rectangle dish/pan

  • Let rise for 45 mins or until doubled in size

  • Preheat your oven to 180ยบC

  • Brush each roll with egg wash

  • Bake in your Preheated oven for 20-25 mins or until golden brown

  • Brush melted butter on the rolls straight out of the oven and enjoy!
