This recipe uses mini marshmallows and butter which adds to its ultra-smooth texture. It also can be made on the stovetop as in a medium-large pot within 15 minutes. It has to be set for 30 minutes at room temperature and then for 1 hour in the refrigerator.

Storage

You can store it in the refrigerator for up to 5 days. I suggest taking it out of the refrigerator and letting it get up to room temperature before eating.

Ingredients forBaileys Irish Cream Chocolate Fudge Recipe

  • 4 tablespoons of unsalted butter, plus more for greasing the 8″ x 8″ x 2" pan
  • 3 cups of mini marshmallows
  • 1 cup sugar (I used organic pure cane sugar and it works very well)
  • ½ cup heavy cream (heavy whipping cream works as well)
  • ½ teaspoon kosher salt
  • 1 teaspoon (or more) of Baileys Original Irish Cream
  • 12 ounces semi-sweet chocolate (use the best quality you can find, it does make a difference, you can also substitute dark chocolate morsels)

How to Make Baileys Irish Cream Chocolate Fudge Recipe

Step 1

Grease an 8" x 8" pan with butter and then line it with 2 pieces of parchment paper that are crisscrossed, leaving an overhang. Butter the paper and set aside the pan. This step helps enable you to remove the formed fudge with ease from the pan later on.

Step 2

Using a medium-large saucepan over medium heat, add 4 tablespoons of butter, 3 cups mini marshmallows, 1 cup of sugar, ½ cup heavy cream, and ½ teaspoon kosher salt. Stir gently until the mini marshmallows are melted, this may take 8-10 minutes.

Step 3

Remove from heat, add 1 teaspoon of Baileys Original Irish Cream, and 12 ounces of semi-sweet chocolate chip morsels, and stir until the chocolate is fully melted and everything is combined. Pour into prepared 8" x 8" pan and gently shake to level out the fudge, after 5 minutes sprinkle optional holiday sprinkles and allow to cool at room temperature for 25 minutes. Cover and transfer to refrigerator and set for 1 hour.

Step 4

When the fudge is completely set, use the overhang to gently lift the fudge onto a cutting board to cut for serving. Enjoy!
